Chocolate Coated Strawberry Yogurt "Dad Snacks"

Aurora and I came up with this homemade “dupe” recipe after she and Frank came to love these chocolate covered yogurt bars from the grocery store. Aurora affectionately termed them “Dad Snacks” and she and Frank would love splitting the treats, as they were quite rich. Apparently everyone else in town must love them as well, as they are often out of stock. So, one day we said, “Well, let’s make our own!” These simple and delicious treats also pack some great protein and are tasty enough to satisfy any sweet tooth. Enjoy!
INGREDIENTS
1 cup frozen strawberries
8oz (appx.) or (2) single-serve packages of vanilla yogurt (or your favorite)
Vanilla (we use powdered, you can also use extract)
Honey (or preferred sweetener)
Pinch of Salt
Silicone molds (or popsicle molds - I do recommend using something pliable to be able to remove them)
TOPPING:
Chocolate Chips
Coconut Oil
Nut Butter (optional)
INSTRUCTIONS
In a blender, combine all ingredients for the strawberry yogurt filling. Blend until smooth.
Add filling to molds, dividing evenly (but do not fill to the top of the mold, to allow room for melted chocolate, which will become the bottom of the treat). Put in freezer to set. TIP: If you would prefer a more “coated” treat, add some chocolate to the bottom of the mold FIRST and place in freezer. Once set, add your filling.
Freeze filling until set (firm to touch).
Melt the chocolate chips with coconut oil and nut butter (optional). You can use the microwave or a “double boil” type of set up - I use a metal bowl over a simmering pot of water.
Once filling is set, pour chocolate over to fill the rest of the molds and put back in freezer until firm (at least a few hours).
Remove from molds and store in freezer-safe container. When you are ready to enjoy, remove from the freezer for a couple minutes before eating.
Extra filling can be used for cakes, as topping for pancakes, as a dipping “sauce” for fruit. Extra melted chocolate can be used to coat fruit, nuts, pretzels, chips, popcorn - whatever you can imagine!
