Chocolate Date Bark

Dates pack a nutritious and delicious punch when you’re looking to keep on track with your nutritional goals, but also have a sweet tooth!

INGREDIENTS

*Use your intuition when it comes to measuring, you can’t really go wrong, as it’ll also depend on how many dates you choose to use.

  • Pitted dates

  • Chocolate Chips

  • Coconut oil

  • Nut butter of choice

  • Salt

  • Toppings (I used Pistachios)

INSTRUCTIONS

  1. “Open” dates and lay on a piece of parchment paper.

  2. Cover with another piece of parchment paper and flatten dates (I use a rolling pin and work them in all directions, you can also use a cup or sturdy container to give them a good press)

  3. Carefully remove the top piece of parchment paper and place the parchment paper with dates onto a baking tray.

  4. Melt together the chocolate chips, coconut oil, and nut butter (optional) in the microwave or in a double-boil set-up (I use a metal bowl over a simmering pot of water).

  5. Pour the melted chocolate over the dates. Sprinkle on salt and additional toppings.

  6. Place in freezer to set up. Once solid, cut into pieces. I like to store it in a freezer-safe container in the freezer (caution for your teeth on the first bite), but you can store in the fridge as well (may “melt” some).
