Chocolate Date Bark

Dates pack a nutritious and delicious punch when you’re looking to keep on track with your nutritional goals, but also have a sweet tooth!
INGREDIENTS
*Use your intuition when it comes to measuring, you can’t really go wrong, as it’ll also depend on how many dates you choose to use.
Pitted dates
Chocolate Chips
Coconut oil
Nut butter of choice
Salt
Toppings (I used Pistachios)
INSTRUCTIONS
“Open” dates and lay on a piece of parchment paper.
Cover with another piece of parchment paper and flatten dates (I use a rolling pin and work them in all directions, you can also use a cup or sturdy container to give them a good press)
Carefully remove the top piece of parchment paper and place the parchment paper with dates onto a baking tray.
Melt together the chocolate chips, coconut oil, and nut butter (optional) in the microwave or in a double-boil set-up (I use a metal bowl over a simmering pot of water).
Pour the melted chocolate over the dates. Sprinkle on salt and additional toppings.
Place in freezer to set up. Once solid, cut into pieces. I like to store it in a freezer-safe container in the freezer (caution for your teeth on the first bite), but you can store in the fridge as well (may “melt” some).
